What a dish! I had never tried a dish like this before. For me, the dressing has meat and olives and other things that I never liked combined, so I always avoided cooking a dressing.
This recipe is a game changer for me, it is simple, tasty, and an excellent example of how strong-scented herbs cooked at the right ratio can create a memorable recipe.
I followed a recipe in Sam Sifton’s book, Thanksgiving, How To Cook It Well . He has a variety of dressing recipes, if you’re interested, please read his book, it’s amazing.

Fresh Bread Dressing

Ingredients
6 Tablespoons of unsalted butter
1 egg, whisked
10 fresh sage leaves, chopped
2 fuji apples cut in little squares
1/2 cup of fresh parsley
1/2 cup of celery
1 whole white onion, peeled and diced.
2 springs of fresh thyme, chopped
1 dash of hot pepper sauce, I used Red Devil
1 cup Turkey or Chicken stock
Kosher salt and pepper
1 loaf of fresh Italian bread
Directions
- In a big pan, on medium-high heat, melt the butter. Add onion, celery, apples, the egg, herbs, hot sauce salt, and pepper and cook for 3 minutes or until the herbs give a strong scent.
- Transfer to a big bowl and add your stock and bread. Mix all together and check for salt and pepper.
- Butter a big baking dish and pour the dressing inside.
- Bake at 350 degrees for 30 minutes or until the top is crispy. If it’s too dry, add more stock.
